Having small quantities of Trebbiano and Malvasia white grapes in excess for the production of VinSanto, we began to work on these two varieties following a very alternative method, by keeping the skins together with the liquid part during fermentation and continuously milling the entire mass; our intent is to obtain a wine with a good varietal expression, an aim often difficult to achieve from these very particular grapes.

Altitude of vineyards: 350 mt. above sea level
Soil composition: Rich clay soil, which guarantees an optimal water retention
Yield per hectare: An average production of 7000 liters
Visual aspect: Straw yellow and inviting
Aroma: Very intense, fragrant and fruity with a hint of exotic fruits.
Tasting notes: Dry, refreshing and soft, with a good acidity and long lasting flavour.
Vinification: The grapes are hand harvested and are then destemmed
and pressed softly, using a technique similar to the delestages.
The maceration takes place in stainless steel tanks and a controlled temperature of approx. 10°C in order to maintain and conserve the delicate fragrances typical of this wine. This wine is bottled in the month of February.
Ideal match:
This is a pleasant and easy drinking wine which is well suited for fresh dishes like salads and fish, but also ideal for white meats and soft cheeses. Serving Temperature:
